The Expert: Rand Petersen a.k.a “Bubba”
You’ll find this lunch time joint in a trailer, with a line-up 30-people long outside. Bubba only serves one smoked dish a day (Thursday brisket is easily the most popular), but you can always count on a large serving of whatever chef Bubba chooses. It could be roast beef, pulled pork, barbecued chicken, beef briskets or barbecued pork ribs.
