Ever since chef Blair Lebsack left a teaching position at NAIT’s culinary school to launch a restaurant that celebrates rustic, whole-animal eating, RGE RD has been one of the true darlings of the culinary scene. And, there has been no resting on the laurels; the menu is still truly inventive, with small plates and entrees that celebrate so much of what Alberta farmers have to offer. A great bet is to take the “Road Trip,” where the chef delights you with several courses and wine pairings. Or, order a couple of the starters and entrees, and then ask for some sharing plates. On my most recent visit, my wife and I swapped plates halfway through our dinner. I’ve never had bison that melts in your mouth quite like the cuts served at RGE RD.
